Whatever you want I guess! I suppose you could use the key dice for disarming traps (picking locks?), introducing different probabilities. The "bottle" ones I guess for random potion effects.
I personally don't see much use for them so I didn't order any. You could make up whatever you wanted.
I was thinking maybe you could use them for searching, instead of drawing cards, just say "good, bad, or nothing." Maybe you could blind pull a die out of a cup and then roll it to see what you got? Again, up to your imagination...
