I took fifty random board hallway tiles and merged them together into a gestalt. I then took that gestalt and began a process of color-refinement.
That's what I got.

This cracks me up - because it is essentially the colour chart for the paints/results I use when doing my HQ bases in older range GW Paints.
From left to right :
Charadon Granite (base trim and deep cracks)
Beastial brown. (dirt and cracks)
Middle colour is the mix of the last two when griming/highlighting
Devlan Mud Wash result over Bleached bone (grime)
Bleached Bone. (base colour then highlight)

If you were to get the CMYK on the above colors, you would find that in your first and last cases you are precisely correct. Those are they, exactly. They were very close to the the colors I actually sampled, so I gave them a little nudge.

Blend each color over the other with dry-brushing, basically. The darkest goes on bottom in an entire coat, the lightest on top in a thin coat. Sort of work from dark to light drybrushing.

I already know how to paint somewhat... Its the process you go through to attain the colours and matching them to a specific paint brand/colour is what interests me

That's simple. My want to know is unstoppable. You can find cmyk codes for all paints--start with a google search by brand. Developing the color scheme just requires a color-wheel.
