To come back on topic:

From the Hero cards of the NAmerican version we learn that the attack dice depend on the weapon used.
The barbarian has 3 attack dice because he starts with a broadsword - 3 attack dice is what any character would gain when wielding a broadsword. For the other heroes:
:dwarf: - short sword - :skull: :skull:
:elf: - short sword - :skull: :skull:
:wizard: - dagger - :skull:

So, as long as no official source states othrwise, we can assume the same rule applies to monsters:
:goblin: - :skull: :skull: - obviousely a short sword, which fits with the figures.
:orc: - :skull: :skull: :skull: - broad sword, also very fitting with most figures. The flail must have the same statistics.
:fimir: - :skull: :skull: :skull: - As all figures carry an axe, this must be a weapon not mentioned in the armory - sized somewhere between the hand axe and the battle axe.
:skeleton: - :skull: :skull: - scythe, statistics as short sword (cannot attack diygonally)
:zombie: - :skull: :skull: - cleaver, statistics as short sword (cannot attack diygonally)
:mummy: - :skull: :skull: :skull: who knows?
:chaoswarrior: - :skull: :skull: :skull: :skull: - battleaxe, obviousely, as also clearly seen on the figures
:gargoyle: - :skull: :skull: :skull: :skull: - oversized sword, statistics as battleaxe.

When heroes pick up monster wepons, they should be handled just like their armory equivalents. This is, if the gamemaster allows looting at all. Personally, I have not mastered an actual game for quite a while, but when writing custom quests I sometimes give some monsters special wepons, such as "this orc carries a useable broad sword" which implies that normally monster weapons are not useable.
As for the Twist wood spell, I would tend to stick with the card text, which states "wooden weapon, such as a staff, bow or crossbow". In my opinion, this excludes weapons which only have wooden handles.

That is the simple and logical way to go in all respects, Big Bene.
Provided you want to keep the game vanilla, these are exactly the facts to go with.

The Mummy's 3 attack dice I interpret as a very very tight bench vise-like grip plus packing a mean magically enhanced punch.

Page 22 of the NA rule book:

"A monster's attack strength is based on it's natural abilities and does not depend on a weapon"
