As Defend rolls are not part of the hero's turn, you should re-word "once per turn" into "once per round". That should clarify things.
But that's all I have to complain about.
Simple, concise special rule without any fuss. I like it very much.

The stats are natural, though some are going to say "He's a knight. He has to have either 3 Attack or 3 Defend." I don't think so.
by the way, one could call him "Squire" until he reaches champion status or wears a suit of armor.
Also, once wearing full armor, the special power may become too powerful. Come to think of it I would let his "Riposte" be defended.

Another special rule I thought of (using the same stats as Sotiris, go figure) was
that the knight may re-roll one die after each of his Defend rolls if he wants to.
Also, no movement penalty when wearing plate armor. I deem that almost mandatory for that guy.
To counterbalance that, if you consider it necessary, forbid him the use of the crossbow or all ranged weapons.

Movement: 2 red dice -2 squares and no plate armor's movement penalty

If he suffers no penalty from plate armor probably your option 2:"which is defended normally" will be placed but then i'm afraid of too many roll dice.. :?
