Over the summer last year I brewed a bunch of molasses wine as a carbon dioxide factory for the plant room. Well molasses wine is nasty and beyond hope, however if one were to take that fluid and run it through a distillation process one gets a product known as rum and it isn't that bad at all.
Turned all of it into rum and gave it all away. Well I did keep a half gallon that is aging in charred oak and will be for the next 5+ years.
So it is said that if you know your enemies and know yourself, you can win a hundred battles without a single loss.

I won't even get into the legality of that... ... ...

But yeah...something I wish I could do, for sure.

My latest experiment is corn wine. Since whiskey is made from corn, I figured I'd try a wine
made from a lot of corn and a touch of barley, and let it age with some toasted oak chips in it.
We'll see how it turns out. It is almost done fermenting and ready for the oak chips.

I took a day of holiday today, and spent it in the trench next to my house.
That's for avoiding flooding my living room next autumn, for sure.

however, as i spent so much time, i was planting 4 new wines in the walls of the trench.
Now i would like to know how to distill :)

I finally got to brew beer!
My neighbor had a complete set in his basement so we hit it up together.
I even convinced him that we should make labels as well.

A locally brewed beer, named after the village with the landmark long barrow on the label. Doesn't get more local than that! |_P

Just get this book "The Practical Distiller" by Samuel McHarry originally printed in 1809. There are modern print copies available, as well as PDF available.

Read that book cover to cover and you will be qualified to hire on as an apprentice in a 19th century distillery.

Yes. I had no idea how to brew, but the artstuff is right up my alley 8-)
Didn't spend too much time on it though, as it would only last as long as it took us to drink all the beer - and couldn't really be recycled unless we made the exact same brew again...

It was an exceptionally well brewed batch. Despite the high percentage it tasted incredibly mild and fresh. I'm not kidding. If I could buy them in stores I wouldn't ever drink anything else.
I've only got one bottle left... :cry:
