I had considered doing the same as you, as I'm a collectomaniac, but I decided against it. I'm going to remake all those AHQ/TitD monster cards with images of recent similar minis, perhaps some from the Bones deal, and simply substiture them with stuff I own. I'm already drowning in minis as it is xD It is very tempting though.
Ivan has some minotaurs, and I believe some of those skaven. If you're interested, tell him I sent you

I have a similar vice like you, Sinned. I want to collect every pictured Miniature of the AHQ+TitD ruleset, all AHQ WD articles and the minis shown on the small side of the AHQ box (lightblue background). I still miss 4 guys. And the correct Lord of Change and Minotaur head.
