Since I usually play with just my daughter we each play 2 Heroes and use the HQGM (HQ GameMaster) computer program. It's free somewhere here in the forums. It handles everything the EWP would normally do. You can use the board along side or just use the computer for the board.

He only has one name, Morcar.
Zargon is the name west-imperial parents gave him in stories generations ago to make him sound more evil in children's ears.

You have it backwards... Morcar is the alter ego of Mentor (that's why the names are so similar). Zargon is the sinister agent of evil constructing Chaos from the shadows.

Morcar is easy mode, with 1BP Gargoyles and 'The Maze'.

Zargon is Professional mode with 3BP Gargoyles and 'The Trial'

Since we have three names for the EWP (Mentor, Morcar, Zargon), we prefer EWP.

But Morcar sounds better.

This would be perfect. I cannot find it anywhere though. Anyone have any idea where this is?

I have always been of the opinion that Morcar is Mentor's schizophrenic figment. i think i used that choice of words not a day ago... i didn't say otherwise here either. i was making a joke about that stupid name Zargon.

So the answer to your question "Can you play without Zargon?", is "Yes, play with Morcar instead."

While I agree with KK that Zargon is a cheesy name that a 9 year old might use. I will point out that Mentor is even worse, so those two go very well together. :D
